Praline- Topped Sweet Potatoes
Submitted by Hillary

Hillary's Mom won a contest for the best Thanksgiving recipe from their local newspaper. She won a $50 gift certificate to a local grocery store. The story goes... Hillary's Aunt Sharon always won stuff. She won a BMW car, a cruise for her family and a thousand dollars, and some other things as well. The funny thing is Hillary's Mom used Aunt Sharon's recipe to make the prize winning Praline-Topped Sweet Potatoes!

3 (1 LB) cans yams, drained
1/2 cup butter, melted
1/2 cup heavy cream
2 large eggs
1 cup packed brown sugar
3/4 cup chopped pecans
1/4 tsp cinnamon
1/4 tsp nutmeg
1 tsp vanilla
1/4 tsp salt

In food processor, puree yams with 6 TBL butter and 2 TBL cream. Add eggs and 1/2 brown sugar. Process until smooth. Spread half of mixture onto a shallow 2 quart baking dish. With remaining mixture, place in a pastry bag with a large star tip. Pipe rosettes around the edge, creating a border. Preheat oven to 375 degrees. In a small saucepan, combine remaining butter, cream, pecans, spices, and salt. Bring to a boil and simmer 5 minutes. Remove from heat and add vanilla. Pour mixture over center of potatoes. Bake 20 minutes or until bubbly. Serves 6
